The Welsh Rabbit is a family-owned cheese shop that operates in the heart of Old Town Fort Collins. In their shop, they provide a variety of local and imported cheeses, meats, and charcuterie accompaniments.
Founded in 2012 by Dean and Nancy Hines, The Welsh Rabbit is rooted in the Slow Food Movement. They are driven by the belief that food should be good, clean, and fair, and in knowing where your food comes from and honoring the people who make it.
