Chocolate Strawberry Yoghurt Bites

Ingredients

  • 1 1/2 Cups strawberries, chopped into small cubes
  • 1 Cup noosa yoghurt, any flavor
  • 1 Tablespoon honey
  • 1 Cup dark chocolate chips
  • 2 teaspoons coconut oil

Directions

Step 1
Line baking sheet with parchment paper.
Step 2
Combine chopped strawberries, noosa yoghurt, and honey. Spoon the mixture into small mounds on the prepared baking sheet.
Step 3
Place the baking sheet in the freezer for about 30 minutes to allow the yoghurt clusters to firm up.
Step 4
In the meantime, melt chocolate chips and coconut oil in the microwave in 30-second intervals, until smooth and fully melted.
Step 5
Remove the yoghurt clusters from freezer and, using a fork, dip each frozen yogurt cluster into the melted chocolate, ensuring they are fully coated. Place the chocolate-coated clusters back on the baking sheet.
Step 6
Optional: sprinkle your choice of toppings! Try coarse sea salt, crushed nuts, dried fruit, or coconut flakes.
Step 7
Return the yoghurt mounds to the freezer for another 15-20 minutes until the chocolate has hardened.
Step 8
Once chocolate is set, move from freezer to refrigerator in an airtight container.
